Black Garlic from Black Garlic North America can be used for months and months. And, though we recommend that you enjoy these sweet cloves by the date on the package for optimal product performance, black garlic is fermented and dried and will likely last as long as it takes you to use it! That being stated, there are some storage practices for black garlic that will ensure you continue to enjoy it at its best - no matter how long you’ve had it!

Refrigerate - Sometimes

For our Peeled Cloves, Diced Cloves and Puréed Black Garlic, the product will be at its best when refrigerated in an airtight container. The smell of Black Garlic will be noticeable in the fridge if it is stored in an open container, which is why we sell our Peeled, Diced and Puréed Black Garlic in resealable tubs and jars.

Storage Tips
Storage tips and “Best By” dates can generally be found on the Information Panel of a package or label. Information panels are typically on the back or side of food packaging.

Let it Breathe - Sometimes

Unlike our peeled and diced cloves, our Whole Bulbs of Black Garlic do not need to be refrigerated. Though they can be stored in the fridge, Whole Bulbs are at their best if left out of the package. Like wine in a carafe, Whole Bulbs should be allowed to breathe. We recommend keeping two bulbs outside of the package at a time, while keeping the rest of the bulbs inside the package and rotating them out of the pack as used. Whole Bulbs have a natural casing and will prevent a black garlic scent in your kitchen.

Avoid Heat, Steam and Moisture

Unlike our peeled and diced cloves, our Whole Bulbs of Black Garlic do not need to be refrigerated. Though they can be stored in the fridge, Whole Bulbs are at their best if left out of the package. Like wine in a carafe, Whole Bulbs should be allowed to breathe. “If it clumps, give it a bump!”

We use plastic shakers for all of our Black Garlic Powder for safe bumping and de-clumping. Follow the storage tips above and, if clumping still occurs, then bump the shaker against a countertop or other surface to loosen the contents. Our powder contains an anti-cake ingredient to help keep powder loose.
