BLACK GARLIC & BEET HUMMUS w/BLACK GARLIC PITA CHIPS
Ingredients:

1 can (540 mL) chickpeas, drained and rinsed

1 medium roasted beet, peeled and chopped

4–6 cloves black garlic

2 tbsp tahini
-
2 tbsp lemon juice
-
2 tbsp olive oil
-
1 garlic clove, minced

Salt and pepper to taste
Instructions for Hummus:

In a food processor, combine the chickpeas, roasted beet, black garlic, tahini, lemon juice, olive oil, and minced garlic.

Blend until smooth. Scrape down the sides as needed.

If the hummus is too thick, add 1–2 tablespoons of water or more olive oil until desired consistency is reached.

Season with salt and pepper to taste.

Serve with Black Garlic Pita Chips or fresh vegetables.
