Recipe of the Week: Black Garlic Steak & Salsa Verde Wedges
Thanksgiving is coming in HOT, and I know we’re all preoccupied with creating the perfect meal (is anyone else as obsessive about research and planning as I am??) In fact, I get so preoccupied that I forget I should also be concentrating on making dinner every night. Long story short, my kids aren’t thrilled.
As winter continues to settle in, making and consuming good food becomes more necessary and warming than ever for everyone in the family. There are SO many recipes that make winter cooking fun AND use black garlic, and this is definitely one of them. If you’re a carnivore, pay extra attention!

Served with sweet potato wedges, salsa verde and a fresh green salad.

Recipe for two people, halve the ingredients for one person.
Ingredients
120g cherry tomatoes
1 shallot
1 tbsp red wine vinegar
20g capers
2 tbsp oil
2 x 150g flat iron steak
300g sweet potato
40g rocket (arugula)
4 black garlic cloves
Medium handful of flat-leaf parsley
Medium handful of fresh coriander
Method
1. Preheat the oven to 200C / gas mark 6.
2. Leaving the skin on, cut the sweet potato into thin wedges. Place on a baking tray and drizzle with 1 tsp oil and sprinkle with a pinch of sea salt. Place in the oven for 20-25 mins until turning golden, turning halfway through.
3. In a small bowl, with the back of a spoon, squash the soft black garlic cloves to form a paste and mix with 1 tbsp oil and a pinch of sea salt and black pepper. Rub this mix over the steaks and set aside.
4. Slice the cherry tomatoes in half and dice the shallot.
5. To make the salsa verde; finely chop the coriander and parsley leaves. Roughly chop the capers. Add all these to a small bowl with the red wine vinegar, 1 tsp olive oil and a pinch of sea salt and black pepper.
6. Heat a frying pan with 1 tsp oil on a medium-high heat. Add the steaks and cook until golden brown, 2-3 mins each side for medium-rare or 4-5 mins each side for well done. Remove from the pan and leave to rest. Meanwhile, add the shallots to the pan on a medium heat and cook for 3-4 mins until softened.
7. Place the black garlic steaks on two warm plates alongside the sweet potato wedges. Top the wedges with the salsa verde and serve alongside the rocket, topped with the cherry tomatoes and shallot.
