Recipe of the Week: Mother's Day Brunch Cheesy Spinach & Black Garlic Omelet
Happy Mother's Day to all you moms out there! We fully understand that we would not be the people we are today without our mothers. They helped us understand the importance of eating healthy and getting exercise, instilled is us a deep love for cooking and for trying new unique ingredients and flavors in the kitchen, and of course helped us develop a deep love for our favorite ingredient, garlic.
We often tout black garlic's versatility in any meal, but it feels like we rarely give you a recipe for using black garlic in your breakfast. So without further ado, here's a recipe from our kitchen to yours for one of our very favorite quick and easy breakfasts: Cheesy Spinach & Black Garlic Omelets. Prep Time: 10 minutes | Cook Time: 10 minutes | Servings 3
Ingredients
3 eggs
3 tablespoons of cheddar cheese
3 tablespoon of shredded parmesan cheese
1 Black Garlic clove, chopped
1 cup of fresh spinach finely chopped
¼ cup of diced fresh tomatoes
¼ cup of green onion
Dash of salt to taste
Sprinkle of pepper to taste
Olive oil or cooking spray
Directions
Beat egg in bowl and mix parmesan, cheddar, black garlic together. In a skillet heat the olive oil (or spritz cooking spray to cover the skillet) over medium heat. Stir green onion, for about 3 minutes. Place spinach in skillet and cook until just wilted. Stir in diced tomatoes and add salt & pepper. Cook until egg mixture sets, 10 to 15 minutes.
